Cheshire is one of England's oldest cheeses. It's even mentioned in William the Conqueror's Doomesday book in 1086. Fastforward to 1939 when 400 farmhouses produced approximately 6,000 tons of cheshire a year. Today, there are only a handful of these farmhouses left.

Hawkstone Abbey is the only remaining farm making clothbound, unpasteurized farmhouse cheshire. In Shrewesbury, the Applebys' of Hawkstone Abbey have been making cheshire since the 50's. In fact, their cheesemaking room is still attached to their house. Cheshire cheese is special because of the rich deposits of salt in the soil on which their Friesian-Holstein herd grazes.

Cheshire has had a reputation for being sharp and acidic, partly to do with the amount of starter used. Appleby's Cheshire uses less. The acidity takes longer to rise resulting in a rich, buttery, mellow flavor. Cheshire's loose, crumbly texture comes from cutting the curds, breaking them by hand, draining the whey, and then milling them. Aged from six to ten months, the crumbly texture belies a full bodied spicy flavor. Appleby's Cheshire has a sweet, caramel-butter smell with notes of straw and a bright, citrus-like acidity. Enjoy this special tangy, flaky cheese with a Cabernet, Bordeaux or a fine ale.

It has become increasingly difficult to find Cheshire cheese over the past 5 years, so I was delighted to discover that igourmet.com carried this item! I love the crumbly, sharpy, rich flavor of Cheshire cheese, and Appleby's Farmhouse Cheshire definitely did not disappoint. Despite my vow that I would not each the entire portion of my order of Cheshire cheese when it arrived, I, alas, did exactly that!

I realize that this is known as the finest Cheshire to be had, but I much prefer the regular Cheshire from IGOURMET. This is sharp to the point of tasting like a really sharp cheddar, NOT the delicate flavor I want from CHESHIRE !!!! (delicious, however, all the same )

Had this at a party with three other great cheeses from igourmet. This cheese was the suprise had to refill it all night. It is so rich, but yet not overdone. Great taste.

If you like sharp cheddars, you'll definitely like this one! Great by itself, with crackers or in a sandwich. The area immediately under the rind has a slightly drier texture than the rest which seems to add to the overall flavor.

My wife, who is from Britain, believes this to be the best cheese in the world. While I am not much of an expert, I must agree with her that I have never had such high quality cheese in the states. It is hard to aquire and pretty pricey when it goes cheesehead to cheesehead with even some of the best the states have to offer which makes it a special occasion type of purchase for us. It has a bold taste without being overpowering and though a firm cheese it melts in your mouth. Don't think for a moment that there is a similarity between Cheshire and Cheddar. That would be as bad a comparison as Mississippi catfish with Copper River Salmon.
