Named after a small rural town in the French Alps, a whole wheel of this cheese weighs over 80 pounds. We found it to be creamier and richer than other Alpine cheeses like Emmental, Gruyere, and Comté. The term D'Alpage indicates that this Beaufort is made from milk taken from Tarines (a breed of mountain cows) that graze naturally. Due to harsh winters, the cows can only graze in the summer, making this "Prince of Gruyeres" a seasonal treat. Aging of up to eight months takes place in the cooler months in rural Alpine cellars.

With each bite, hints of various grasses, herbs, and wildflowers are notable to those with sensitive palates. Its flavor is nutty, creamy, and sweet. Like Gruyere, Beaufort melts well and is perfect for fondue and hot sandwiches.

When I opened the package, the aroma was incredible, then......the flavor was even more incredible. It is creamy, smooth, rich, very flavorful, and leaves a most wonderful aftertaste that lingers...until you indulge and take another bite. It fulfills both the nutty and sweet needs of the taste buds. Not overpowering ? just wonderful. I am ordering for my mother, who also adores French cheese.

Truely one of the most distinctive cheeses from the Haute Savoie region of France. This alpine delight is perfect for snacks, hors-d'ouvres, especially after a meal and usefull if you wish to add a distinctive flavor to any dish where Gruyere is specified. For any occasion, you can't go wrong with Beaufort (if you can find it).
