Affidélice is a specialty cheese created by Fromagerie Berthaut in Bourgogne, France. Essentially an Epoisses washed with Chablis (white Burgundy wine), this cheese has a delectable fruity aroma and a rich full flavor. During its affinage (aging), the cheese is repeatedly wiped with a chablis-soaked cloth. Over time, the flavors of the wine seep into the heart of the cheese. A wonderful addition to the after-dinner cheese course, Affidélice is a must for serious cheese lovers.

I normally have this cheese with a bagette. Accompanied by Italian/spanish ham, english stilton and dry salami. Various wines seem to work with this combo, Chablis of course but also Mouton Cadet and even Valpollicella

My most favorite cheese (so far) is Epoisses, but this runs a close second. It is slightly milder and less expensive, with almost the same flavor as Epoisses.

This is a wonderful flavorfull cheese. I first served it as an after dinner cheese and everyone liked it very much. I have also used it as an hors de' oeuvre and it was also a hit. I will definately order it again.

I fell in love with Epoisses on a recent trip to France. When I was shopping with Igourmet for some more of it I found this cheese and decided to try it. I was thrilled. The Chablis adds a touch more flavor to an already wonderful cheese.

Runny at room tempurature. Rich, decadent, creamy, smooth. Heaven on a cracker!

Surprisingly subtle flavor despite pungent aroma. This cheese is very runny and gooey, and while I had it on crackers, it would be excellent with apples or pears. Despite the Chablis washing, there is not much detectable wine flavor. Expensive, but not to be missed by anyone that loves French cheese.

This intensely-flavored soft cheese is not for the faint of heart. If you truly love sultry, stinky cheese though, you've got to try this one. I don't find it wine-y. It's a little like Limburger, but much better.
