The first wheels of Morbier ever produced were made from milk leftover from Gruyere de Comte production. The cheesemaker would press the leftover curd from the evening production of Comte into a mold and cover it with a thin layer of ash to prevent it from both drying out and attracting flies. The next day, he would add the leftover morning curd on top of the ash. The result is a two-layered semi-soft cheese with a complex fruity flavor and a slight tang. The two layers of the cheese have slightly different flavors, with the layer from the evening milking tasting fruitier than that from the morning milking. The ash not only separates the two layers of the cheese; it also serves an aesthetic purpose as it makes a dramatic presentation. Morbier is made using pasteurized cow's milk and has a complex, bold flavor. Its yellow-ivory interior has a smooth texture, wrapped inside a creamy-brown crust. This cheese pairs well with French Saucisson or is great on a sandwich made with a crusty bread. It also melts beautifully.

This was my first try of a "stinky cheese." While pungent, the smell was not overpowering. The flavor was surprisingly complex, and I enjoyed this cheese served at room temperature on flatbread. A willingness to give a stinky cheese a try is a must for those wanting to try Morbier, but it is worth the risk.

So I had this package delivered to my mother's house. I was told never to buy the Morbier again. I didn't tell her I ordered a Stinky cheese, she thought it had spoiled. We had to take the cheese outside to eat it. But when we spread that wonderful creamy and light cheese over crispy flatbread crackers heaven exploded in our mouths. This is a great cheese. Buy it!

Was very impressed by size, lovely fresh taste. Be sure to slice both layers to realize two different flavors. They were more pronounced after a week, really great just alone when no patience or makes a great grilled cheese and tomato sandwich. Sent to friends for Christmas.

One of our all time favorites. Great conversation starter too since it has the ash line and two different tates above and below. You can sound really smart and like a true connoisseur when explaining how this cheese is made. Even kids can be introduced to stinky (and different looking) cheese with morbier

Ever since I have ordered morbier, my husband can't get enough. It is pungent but mellow enough for people who are not yet ready for the Stinky cheese. It is best eaten like all cheeses at room temperature and be sure to eat pieces that incude both top (above the ash line) and bottom (below the ash line) for they have different flavors.
