Similar to Brillat Savarin but from farther south in France (the Champagne region), this triple-crème owes its name to two friends who created it back in the 1970's. The more famous of the two, Robert Rouzaire, founded the Rouzaire cheese manufacturing company. According to Pierre and Robert's story, impatience played a major role in the developmnent of this fresh cheese. Tired of waiting for the cheese to fully ripen, they consumed a wheel of it early in the cheese-making process, when the cheese was quite soft and still spreadable on the inside. They loved it and went on to perfect the recipe, adding crème fraiche before curing for extra creaminess. With a rich, buttery texture and a tangy aftertaste, this is one cheese you will definitely want to include on the cheese board.

Upon first receipt, the Pierre Robert was overripe.[...]Needless to say the Pierre Robert was a disappointment. The complexity of the cheese was lacking and once it heads to overripeness it becomes unbearable. I would not recommend taking a chance on this cheese. For this type of cheese, stick with the Camambert, Pave d'Affinois, or Coulommier or treat yourself to an Epoisses or Affidelice. Cheers.

[...]we opted to try this wonderful cheese as a substitute and were not disappointed. In addition to pairing with wine for a mid-afternoon pick-me-up, it goes well on a Sunday morning when you'd rather have champagne, dried fruit and cheese instead of cooking. We never got around to trying it with salads, etc as it DISAPPEARED QUICKLY!

This is indeed an incredible cheese. One of the best I've had in the US. Try to pick some up whenever you can. It has a nice nose and a wonderful, buttery flavor. The aftertaste is very nice, too.
