For more than 20 years, Jacquy Cange has worked at mastering the art of creating new cheeses and developing the perfect affinage for each. The basis and the spirit of his work is finding Belgian and French farmstead cheeses, then adding different ingredients to create new, flavor-enhanced cheeses. We are thrilled to introduce this French-made Fourme d'Ambert, ripened with white Sauternes and perfectly aged for two months. Sauternes is a region of Bordeaux well known for its terrific sweet white wines. Primarily made with the Semillon grape, Sauternes is justly famed for its accents of fruit and vanilla, and its wonderfully smooth and creamy texture. The marriage of these two unique treasures creates a cheese unlike any other we've tasted. Simply put, this is an incredibly smooth, yet complex blue that is a must try for any true blue cheese lover.

I love a strong, complex bleu, and this is certainly complex, but it's smooth, not robust. For all these reasons it truly holds my attention, indeed my fascination, and I'm eager every evening to try its flavors once more.
