French Mimolette, also called "Boule de Lille," dates back to the reign of Louis XIV, who prohibited the import of Dutch cheeses into France. The residents of Flanders had strong cultural ties to Holland and dearly loved the banished Dutch specialties. Their alternatives were to either smuggle in contraband cheeses or produce their own.

Thus, Mimolette was born. Aged Mimolette is a hard cheese that has the same texture and spherical shape as Dutch Edam, but with a natural rind. It is produced in nine pound spheres containing a bright orange interior. Because of its hue, it is sometimes called "Halloween Cheese." It tastes gloriously sweet, yet uncommonly tame for a French cheese.

Aged Mimolette, popular throughout France, is a dense cheese, hard enough to be grated. Enjoy it chunked or served with a hearty bread and fruit.

It's a little bizarre to combine French cheese with an Italian classic but- I love to use Mimolette in my risotto. I can only describe it as a "gravy" taste. Rich and delicious. Just substitute it for the Parma cheese in the recipe or go 50/50. Verrrry good!! (BTW-Italia again in the World Cup 2010!)

Great on crackers, along with fruit as a appetizer. Just a nice, mild and tasty cheese. It was hard to cut and crumbled - but very good. Worth buying again.

I first learned about this cheese from a French friend of mine---she has her sister send it to her from France, as my friend lives here in the U.S. This is another of my favorite cheeses from France---a hard, flavorful, smooth, and colorful cheese, bright orange in color. I tend to prefer old, firm (hard) cheeses with lots of flavor to the soft, mild cheeses of the world---and mimolette is one of the best. Again, it has an edible rind and that is one of my favorite bits. This cheese is available in a "young" form that is not as hard and not as flavorful, but for those who enjoy a firmer, more robust-flavored cheese I suggest you try the "old" mimolette---it has more kick, and a firmer texture---it reminds me of a really good, hard cheddar cheese. This is a cheese that only gets better with age. I have let it age to the point of almost being unable to cut it with a knife and it is delicious even then. I recommend this cheese very highly to those who enjoy a firm, robust, flavorful cheese---especially good after supper for dessert accompanied by fresh fruit, particularly good with apples, pears, or peaches. You must try this cheese. Bon appetit!
