The origin of Port Salut (also known as Saint Paulin) is closely linked to the French Revolution of 1789. Fleeing from the persecutions of the "Terror", a congregation of Trappist Monks set themselves up abroad and, in order to survive, learned how to make cheese. When they returned to France in 1815, they built a new abbey and continued to make their cheese. Port Salut is a semi-soft natural cheese that is easily recognized by its orange rind. Unlike many other French cheeses, it is rather mild and sweet in flavor. Smooth and velvety with a lightly acidic taste, Port Salut has universal appeal.

I first tried this cheese last Christmas. I just added it to my usual cheese tray. Got rave reviews from everyone (including those who prefer stronger, more robust cheeses). I just ordered it again and have not had time to experiment with it yet. I plan to try it as a dessert cheese, spreading it on apple and pear slices, nuts served on the side. It is just such a quick appetizer to put out while you are preparing your main meal or just to have with drinks. Telling people the history of this cheese just adds to their enjoyment of it. I never had anyone try it that didn't love it.

The cheese is really good but for some boneheaded reason there's a waxy, orange mess on one side and the other has bits of the paper label. This is a very, very soft cheese, it's not a good idea to put these things on it. They just stick.

This cheese is a great mild counterpoint to its stronger cousins. Serve it on a cheese plate with fruit as an hors d'oeuvre or as part of an after-dinner cheese board.
I have purchased the whole wheel previously and saved 1/2 for myself and packaged the other as individual gifts. When kept from air it keeps reasonably well.

I cannot expree distaste about this product. This is actually the first time I have ever tried the Port Salut by SAFR. I am completely overtaken by it's lasting taste in my mouth even after several moments have gone by. I simply put this creamy cheese on a cracker and enjoyed it.
