The world's most famous melting cheese, Raclette is made in the Alps on both sides of the French-Swiss border. The French version is perhaps a bit softer than Swiss Raclette, but the two taste very similar. Raclette has a semi-soft interior dotted with small holes and a rosy inedible rind. Eaten as a table cheese, Raclette has a smooth, creamy taste that is neither too salty nor sharp. However, our French Raclette tends to have a strong, pungent aroma that is not for the timid. This cheese is traditionally melted (a half wheel is placed in a fireplace, then the melted top surface is continuously scraped off) and layered atop boiled potatoes, pickles, fresh vegetables and sliced meats. I used the cheese for a christmas dinner with my friends. Since I'm originally from Germany and Raclette is the typical christmas dinner for my family, I was really glad to find it here in the US. The cheese tasted exactly like the one we have at home. It has a strong taste and you can combine it best with all sorts of vegetables and different kinds of meat (pork tenderloin, steak, etc.)

This cheese was excellent [...]. The only con I have is the cheese is not sliced and I could not find any deli to slice products not bought from them. I would recommend the igourmet sliced the cheese because it is very hard to do so without commercial slicing.

We used the Raclette cheese with our Swissmar Raclette Gril and introduced 3 families to this Swiss/French specialty meal. We got nothing but delightful ah's and oh's. The cheese was melting quickly and evenly and then flowed out of the Raclette pans without any residues. The taste was mild and creamy. We instructed everybody to pour the cheese over the steamed potatoes (like it is done in Switzerland) but found that everybody poured it over their potatoes, steamed vegetables, meat or bread. We definitely got 3 new families hooked on this traditional meal.
