The world's most famous melting cheese, Raclette is made in the Alps on both sides of the French-Swiss border. The French version is perhaps a bit softer than Swiss Raclette, but the two taste very similar. Raclette has a semi-soft interior dotted with small holes and a rosy inedible rind. Eaten as a table cheese, Raclette has a smooth, creamy taste that is neither too salty nor sharp. However, our French Raclette tends to have a strong, pungent aroma that is not for the timid. This cheese is traditionally melted (a half wheel is placed in a fireplace, then the melted top surface is continuously scraped off) and layered atop boiled potatoes, pickles, fresh vegetables and sliced meats. I used this product as an Hors d'oeuvre at the Christmas and New Year's Holidays and found it to be supreme. When I had some left in the refrigerator post holidays, I used it in an original recipe: Chicken Breast Raclette with Capers. The melted French Raclette on the roast chicken with the capers and the caper brine captured the essence and aroma of the cheese.

It's great with the Raclette Grill. We used to eat raclette every week back in France, during winter time. We really enjoy the Raclette melted on potatoes, prosciutto, ham, cornichon, viande de grison, soucisson (salami).

If you have never had this then I urge you to try it. I got hooked on Raclette some years ago while living in Europe. I have purchased raclette locally from high end grocers but nothing compares to the raclette you get from igourmet.

I really love Raclette. It is a great cheese that melts very easily. I melted it on toast, or just sliced it for sandwiches. If you melt it, try to spice it up a little by adding black pepper and/or Parpika powder before serving.

Will order this one defenitly again.

I got 2 lbs of this cheese for 4 people and it was MORE than enough ... we tried our new Raclette grill and everyone loved it and the cheese. We also tried the French Cornichons with the cheese and they were remarkably delicious! I would definitely order again!

Some may be initially put off by the pungent aroma, but, it has very little to do with the rich, smooth, and mild nutty taste.

The cheese is one the great melting cheeses and ranks with vacherin and gruyere.

Highly addictive!

My husband doesn't think Raclette is quite pungent enough, but when eaten with other strong cheeses, its subtle flavor it welcome. Of course it is even better melted served with crepes.

This is a good quality cheese. It was shipped to us and arived in very good condition. We have tried the Swiss Raclette and the French. We prefer the French. It has a smooth texture when melted and is not salty like some. It seemed a little high priced but with the excellent service I received over the phone and very fast shipping, made up for the price. I have searched the whole U.S. over the internet for Raclette and finally after all the searching I came back to the very first web site I found selling French Raclette
