Made in a town with the same name since the early 14th century, Chaource is the most famous artisanal cheese from the Champagne region of France. This decadent cheese is delicious at any stage of ripeness and has a slight mushroom scent with a rich, creamy flavor. It is not dissimilar to Brie or Camembert, but it has an even creamier texture, especially when aged. The cheese is made in miniature wheels that give it an elegant appearance for service with champagne.

This cheese is so very wonderful on many types of crackers, just to eat as you read a good book or have with a strong cup of great coffee. What a combination; this cheese and good coffee. It is so earthy that you can almost imagine being back in France, sitting outside a cafe and, thats it. A good way to at least mentally return to France. It is an incredible cheese. Flavor, texture, and a flood of memory.

I like St. Andres, but wanted to try something different. This is just fantastic fresh, barely ripened.

It won't last long enough in our household to become runny, pungent etc -- just tooo good the way it is now.

I ordered this cheese along with several other cheeses, most of which were pretty stinky. This one was more mild than the stinky ones which was a lovely contrast. I thought it was nice to have that instead of having all of them be overpowering. I really enjoyed this cheese and would recommend it to just about anyone.

This is, hands down, one of the most delicious cheeses I have ever eaten. At first bite we all just looked at each other...pure taste bud bliss. Room temperature, with juicy pear slices or a few grapes, this will be my final meal before I die.

First tasted a fully-aged, runny, pungent Chaource at the end of a dinner in Bourgogne, served to go with the last sips of our red Beaune. Had never even liked runny, pungent cheeses before but Chaource was captivating in its rich complexity. Enjoy with good wine & sliced baguette. Above all, let it warm to runny room temperature before serving, & you'll feel like a Medieval noble.

Just got back from Paris and bought some in the duty-free shop - I loved it. I'm glad to see I'll be able to get more [...]. A perfect after-dinner cheese as is or with a little sweetness added (honey, grapes, cranberry sauce) to cut the richness and to compliment the tanginess.
