We're happy to bring you this cheese from the Pays Basque region of Aquitaine (French Pyrenees). Its milk comes from red-nosed Manech ewes raised on farms adjacent to the Abbaye de Notre Dame de Belloc. The Abbey has profited from milder climates and the rise of pastoral civilizations. Monks of this Benedictine Monastery continue to teach the art of cheese-making to local shepherds. Its rind is naturally gray with patches of red, orange, and yellow. This cheese has a fine, closed texture and is is rich with butter-fat. The lingering flavor, like caramelized brown sugar, is the result of six months of maturation.

Oh so delicious - sliced and put on french bread or crackers or eaten plain. I grated a little and put it on top of creamed scallop and mushroom crepes - ran it under the broiler a few minutes and it was heavenly good.
I will buy this again and again. I hope it stays available.

This is a fabulous cheese before and after dinner, and any time -- just let it be room temp. -- to me, it is best tasted pure; accompanied by red wine, courant jam. I think it would be a waste to have it melted or mixed in a salad. For me, its enjoyment is best by its glorious self. It's deliciously crumbly, and each crumb is full of flavor, to be savored to its "last drop."

The flavor is most unique: flowery, as it melts on your tongue, reminiscent of fragrant meadows covering the mountains; it evokes warm summer breezes. There are hints of sweetness, remote nuttiness. Accompanied by wine, or even beer, but best by itself to fully enjoy the delicate and unique flavor of this wonderful creation!

This stuff is delicious and made me want to close my eyes as I was eating it to fully savor the taste. I tend to like cheeses from the Basque region of France (Petit Basque is another favorite of mine), and this one is no exception. While I'm not sure I'd describe the flavor as caramelized brown sugar, there certainly was a lovely sweetness and richness about it.
