Banon is a northern Provençal cheese that comes in a 3.5-ounce mini wheel, traditionally washed with eau-de-vie (marc), wrapped in chestnut or grape leaves, and tied with raffia. Depending on the season, it can be made of pure goat, pure cow, or a blend of the two. This Banon is brought to us by Le Vache de Chalais. It tastes best after having ripened for a few weeks. During this time, it develops a smoother texture and rich flavor. Ripening often results in a small amount of edible blue mold under the wrapper. This mold helps to develop the flavor of the cheese. This cheese has a woodsy, fruity flavor that goes well with fresh fruit and sweet dessert wines.

We found this cheese to be delightful. We used it for dinner (with a selection of other cheeses) and, on a separate occasion as an appetizer. It is smooth, perfectly rich and lasts longer than the recommended 7 days. It does gain a stronger flavor over time.

This product was rather a bad surprise. It was overly soft to the point that it could not be cut into portions. It was close to being a semi thick liquid. It had to be scrapped off of the wrapper leaves with a spoon. There was no rind. It did not resemble at all the photo.
I was very disappointed after seeing the previous ratings.

Let the cheese age a bit and don't be put off by some mold on the leaves. It develops flavor well. It gets almost goaty as it ages and the chestnut leaves impart an interesting nutty flavor.

This is both a show-stopper (I serve it atop its chestnut leaf wrapping) and a tast-bud pleaser. It's the star of my cheese board year after year, and party after party. The only bad thing is that there's never any left for me to eat when the party's over!

Although the cheese is very good, it is not what is advertised on the web site. It is suppose to be a combination of Brabis (ewe), Chevre (goat) and cow's milk. The original wrapper indicates that it contains only lait du vache.
