Abondance, a name-controlled cheese from the Savoy region of France, is made with fresh partially-skimmed milk and formed into 20-pound wheels. This extraordinary cheese is similar to Gruyere de Comte, but more complex and buttery. It has a firm texture, nutty flavor, and a distinctive fruitiness. In addition to being a delicious table cheese, Abondance melts nicely and is often substituted for Raclette.

Abondance never disappoints. I've bought it several times and am likely to make it a standard in my kitchen. Though it is delicious in cooking, I like it most with fruit or on a bland cracker.

People new to cheeses are sometimes put off by the strong aroma of Abondance. But they change their minds when they taste it.

I would give this 4.5 stars. It is definitely for stinky-cheese lovers; it's not for wimps. It's like an extra, extra deep gruyere -- too strong for melting over a gratin because it's even more pungent when heated. I think you could use a small amount for adding depth to a fondue but I didn't try it.

This is a good cheese for dieters because a few bites are satisfying. You wouldn't eat large quantities of this in a single sitting.

One whiff of this cheese when I opened the package and I was taken back 30 years to my year abroad with a family in Denmark. The parents were amazed that I ate a cheese that smells like this one does - it was too strong for their own daughters! I loved it for breakfast, especially on top of very fresh bread smeared with a dark jam like black current. It's also great that way for dessert. It melts beautifully, too. It's especially tasty when melted on a strongly flavored multi-grain bread, because of the nuttiness. Pair it with a pear, like a perfectly ripened sweet Bosc (see my lunch today below!). This is not a cheese for wimps!

I had the good fortune and remarkable foresight to order this cheese. I was reading a book about a great restaurant in Paris that served that particular cheese as one of its best. I felt very intelligent when I realized it was the very one I had ordered.
