Abondance, a name-controlled cheese from the Savoy region of France, is made with fresh partially-skimmed milk and formed into 20-pound wheels. This extraordinary cheese is similar to Gruyere de Comte, but more complex and buttery. It has a firm texture, nutty flavor, and a distinctive fruitiness. While the strong aroma of this cheese may be a bit off-putting, the flavor is divine. In addition to being a delicious table cheese, Abondance melts nicely and is often substituted for Raclette.

This cheese MUST be eaten at room temperature. It is great with apples,grapes or pears for dessert, as a melted cheese on crostini or with boiled potatoes, thinly sliced as a component of an antipasto plate or on a coldcut platter. It is also great melted on cauliflower and on pasta with grated tuna eggs (Bottarga di Tonno) or anchovies from igourmet.com. Wonderful as a raclette cheese.

This was so like the abodance we would purchase in the Haut Savoie where we skied with our family. It is great with French bread, a touch of butter, and a hearty glass of red wine. Close your eyes and listen to the cow bells ringing in the distance.

This cheese had a strong smell out of the wrapper. Once the outer part is trimmed off the smell leaves. We found the cheese flavorful, but not too strong. The flavor comes out best at room temperature.

I served this to guests visiting from France and they loved it. I thought it was pretty stinky when I was cutting it, but the taste wasn't as strong as the smell, but a little strong for my taste. My daughter who spent a summer in France was eating it like there was no tomorrow.
