This AOC (name controlled) creamy blue cheese is a lovely French treasure. "Fourme" is the old French word for cheese from the Latin noun forma, describing its cylindrical shape. Ambert is the mountainous town in Auvergne where the cheese is made. The people of this town have been making Fourme d'Ambert since the 7th century! That makes this cheese as old as Roquefort. Fourme d'Ambert is high in moisture and compact in texture, so the blue mould does not spread in veins like other Blues. Rather, it forms in distinct, disconnected pockets. Compared to Blue Stilton, it is much creamier and, therefore, less crumbly. Fourme d'Ambert is cave-aged for a minimum of two months, made from raw cow's milk and has a tremendous, creamy, full-bodied flavor.

This bleu cheese was wonderful. We like it so much better than Roquefort-it's great with bread and wine. I used the left over to make croquettes with chicken and they were excellent.

We enjoyed this cheese in France and were delighted to find it available in US. Our family enjoys cheese blends on their plate with grapes and a nice red wine. Usually we don't cook with the favorite cheeses but enjoy them as an appetizer or snack when the family or friends visit.

You have to really like strongly flavoured French cheese - aactually, the Fourme D'Ambert in Grenoble (France) was simply divine. But this isn't so bad itself. Not only would I recommend this to a friend, I already did do dat.

An excellent product, if you like blue cheeses. It can be used for pasta meals, in addition to other cheeses, like for example together Emmentaler (available from igourmet). If you like to eat it just like that, let it stand a little, so the full flavor can develop.

Owning a house in southern France, my husband and I (both lovers of bleu cheese) have made the pilgrimage to Roquefort-Sur-Soulzon...the source of our beloved Roquefort. We thought that this was the best. We were wrong. On a recent visit to Thomas Keller's beautiful Bouchon restaurant in Napa Valley, we were served a portion of Fourme d'Ambert in our cheese course. Angels sang!! This is a spectacular cheese. I encourage all to try it. If you are a roquefort afficianado...you MUST try this. Just ensure that, as with all good cheeses, you bring it to room temperature before serving. ENJOY!!

Chef cheese lover on a diet-so I'm very picky about my cheese treats. Great blended with a touch of olive oil and fine balsamic vin on sliced tomatoes. Also add to roasted squash for the last 5 min. of cooking.

To my tastes, hands down the best blue cheese on the market. If you prefer a crumbly blue, this is not for you, but if you like creamy texture, this is it! With ripe pears in a salad, mmmmmmmm.

This is just the best blue cheese around. I keep it on hand all the time. It does have a milder, creamier texture but that is what makes it perfect in salads, on steaks and in stuffings! Love this cheese!!!
