NIcely mellow, not too "sheepy", and not runny. Reminiscent of a really high quality brie, but a little firmer. A delightful cheese with dried cranberries, baby arugula, and a balsamic vinaigrette.

This reminded me so much of French Brie, that I took the Fig and Marsala Wine spread, covered the top of the Brebicet, and put it in a 350 degree oven for 5-10 minutes. It came out absolutely delicious and my guests were amazed!

Got leftover chicken? Cube into bite-sized pieces. Cube Brebicet cheese into slightly smaller pieces. Mix, two-thirds chicken, one-third cheese. Pop into the toaster over or under the broiler just until cheese starts to melt. Spoon into a bowl and top with Tomato Pear Chutney. Prepare to swoon.
