Almost universally known today as a stinky German cheese, Limburger was originally created by Belgian Trappist monks. The Germans, noted in the dairy world for their mimicry, latched on to the Belgian recipe and made it their own. Strangely enough, in the 1880's, a New Yorker named Emil Frey copied the recipe for Limburger and created Liederkranz - in effect, creating a copy of a copy! This pasteurized cow's milk cheese has a tangy, creamy, Brie-like flavor with an incredibly pungent aroma. This perfume, which is caused by bacteria living in the rind, indicates a strong tasting cheese. However, Limburger is actually fairly tame, especially when you trim the rind. It is best when served with plenty of cold beer. Other good accompaniments are tinned fish, onions, crackers, fruits, and vegetables.

This cheese is so much smoother and rounded in flavor when compared to the Limburgers made in the USA. It is really delicately flavorful, once the person is past the smell. Crazy, but I love it with freshly steamed fingerling potatoes... slice the potatoes, place a little cheese on the hot slices and sprinkle with chopped chives for a great hors d'oeuvre.

I bought this for my husband, who is of German extraction and loves "stinky" cheeses (as do I). We couldn't find Limburger in any of our regular supermarkets anymore, so I had to go online to find you and order just a few to see if it would appease him. It did -- but, he complains of the lack of "aging" and said on a scale of 1 through 10, to make it a 5. But I think he's being "harsh" -- he was so pleased after the first taste that, instead of dinner, he just wanted crackers and your Limburger cheese. I anticipate ordering again from you guy -- and not too far off! Linda

When I was growing up Limburger was one of the "treats" my father kept to himself. He had to eat it outside. I, of course, had to enjoy this with him. I don't know if it was because of my age & inexperience, but this Limburger is just a wonderful cheese that is not scary at all. When I first bought it I really expected a lot, but it was so good that I started using it in panini sandwiches. Limburger has such a bad rap, but if you will delve into the truly stinky cheeses, you will understand why this one is so mild. I wanted to be scared, but this one isn't it. It is a great cheese, and this is my 3rd purchase.

This was my first experience with Limburger cheese. I bought the German beer as advised and got it really cold for the "experience". I first tried the cheese with the rind. I guess that is an "acquired" taste as it has a very "rotten" flavor, in my opinion. When I removed the rind, I was suprised to not find that rotten flavor in my mouth again, but was also disappointed because there was not much other flavor. The texture was much creamier than I expected. Interesting. Will give it another shot, but not "Wowed!" by Limburger. I would recommend to a friend, but not my BEST friend. [...]

Limburger is one of the few cheeses like cheddar, swiss, and parmesan that has entered into common cultural knowledge despite the fact few people are brave enough to try it. Yes, the rind smells...it smells badly like unwashed feet to me. Once you accept that and don't let your experience be ruined solely by the initial nasal impact, you'll find the tasty cheese under that rind to be a fun little treat. I personally wouldn't eat it daily, but as a fun purchase to dare your friends or kids with, it can be a good first exposure to unusual cheeses.

This cheese was average in every way. It was not bad tasting, but I expected more from a limburger. Being of Italian descent I enjoy many deli cheeses and meats. This cheese was very disappointing for the price. I would recommend, for flavor, a decent quality fontina, muenster or brie for a better value.

What a shame this wonderful cheese has become the butt of jokes. Although the initial aroma is strong, the flavor is mild, creamy, and remarkably gentle on the palate. Eat this alone or with your favorite rye and a thin slice of sweet onion. If you must, add a slice or two of boiled ham. And don't forget the beer!

Being housebound, it's very hard for me to get things I yearn for. Limburger is at the top of my list.
I was delighted at the quality of the product and shipping arrangements. After it arrived I had a long conversation with myself about how stupid I was for not ordering more than one piece.
I'll remedy that with my next order.
