To bears emerging from their winter hibernation, one of their first and favorite foods is Bärlauch (Allium ursinum). Bärlauch translates from German to "bear's garlic", and people living in the Bavarian Alps have known this tasty herb for thousands of years. Archaeologists discovered traces of wild garlic at alpine sites settled by Germanic tribes during the Neolithic period.

Today, Bavarians still anticipate the annual arrival of wild garlic, one of the first plants to appear after the melted snows of March and April. Soups, cream cheese, salads, and pasta dishes featuring wild garlic recall the plant's traditional healing properties and welcoming antidote that refreshes and wakes the body from its from winter slumbers.

Schönegger Käse-Alm uses wild garlic to enhance this semi-hard, seasonal cheese made from the raw milk of cows that graze on nearby mountain meadows. During an eight week ripening period, the extremely pungent cheese is saturated with a mixture of fines herbs, which impart a hearty, aromatic flavor.

We really enjoyed this cheese, it didn't last the evening with 12 guests and 18 cheese to sample...We didn't find it to be overly pungent or offensively strong smelling. Though I must admit that we are lovers of garlic and things pungent...Might not be for everyone, but we loved it...

I love garlic and use it as often as possible but this cheese has an overwhelming STRONG garlic taste and smell that I really did not like. I'm not sure how I will use it up -- maybe a very small amount to make cheesy garlic bread. I do not recommend putting this on a cheese platter with other cheeses. A ziploc bag does not contain the odor of garlic.

I was almost afraid to unwrap the cheese given the other reviews, but the odor really wasn't that bad, or maybe it was just because we liked the cheese so much that it didn't last long enough for the smell to permeate the house!

Served this last night at a party. The smell made several people leave the room! One guy said it would make great bait for catfish, but he took it home--I think for him!

All the women hated it.

Some men came to it and enjoyed the layers of flavor. I was serving wine. This cheese needs to go with a dark beer in an outdoor garden!

The only other place I would serve it is in a bathroom with the exhaust fan on!!!!

Yes this will overwhelm your fridge, even when hermetically sealed. It is a very raw milk cheese and the flavors are not overwhelmed by the garlic. I think you could add small bits of plutonium and it would not be overwhelmed. Try anything, but in moderation.

My wife could not handle this cheese due to it being soooo stinky. In fact, even wrapped tightly in plastic wrap, it still overwhelms our refrigerator!

Tried this for the first time tonight with friends. We had a cheese party, actually, with a combination of pungent and mild cheeses. This one got high marks. Even though it is pungent, our friend who hated Stinking Bishop ate this cheese over and over again. Highly recommended.
