Bergerebell, or Mountain Rebel Cheese, is, as the name suggests, a hardy mountain cheese from Sulzberg located in the mountains of the Black Forest, in Baden-Württemberg. The cows are raised only on fresh grass or hay. They do not pasteurize this milk, and these two factors make a real difference in flavor. Also known as Bergkase or Alpenkase, Bergrebell is matured in the cold, high regions of Bavaria. The result is a cheese with an aromatic golden rind and a rich depth of spicy yet fruity flavor with notes of grass and herbs. Bergerebell is a complex and delicious cheese on its own, but like other classic mountain cheeses it also melts well.
