Rauchkäse is a smoked cheese typical of Bavaria. This specialty was originally produced by Trappist Monks in the abbey of Rotthalmunster. Today, there are many versions of Rauchkase being produced in Bavaria. The most well known version is Bruder Basil. Like Bruder Basil, Rauchkase is also smoked over select beechwood embers. But, Rauchkase is a more artisanal cheese with more body and texture in comparison to the smoothness of Bruder Basil. The rich, buttery Bavarian cow's milk complements the smoking, creating a robust, smoky aroma with a delicate smoky flavor.
You can cook with Rauchkase, but we recommend doing as the Bavarians do; just cut slices and eat with your favorite breads, cold cuts, and raw veggies. If you are not having it for breakfast, then don't forget the beer!

The cheese itself was very good but the rind that was supposed to be edible was a little too hard and bitter for my tastes. I prefer something like Bruder Basil where both the cheese and the smoky rind are tasty.

Fritz and Deirdre liked the rind but Dalmatians aren't as finicky I suppose.

I am not a fan of smoked products, but I liked this cheese. The smoke flavor is not too pronounced. The cheese is easy to eat with a pleasant flavor, but not a complex "great" cheese, more like a daily drinking wine than a special occasion wine. It is certainly an excellently priced cheese, too.

I tried this for the first time and loved it. Rich flavor with nice smokey taste to it. So good I ate it "as is."

A good snacking cheese...also good melted on top of a baked potato. Rind detracted from a five-star rating...not very tasty and difficult to remove.

There's something about smoked products that makes me think of Swiss Colony - but smoked does not necessarily = "processed cheese/meat food." And it's times like this when I think "Dang, I need to buy a smoker and play with it." This smoked Rauchkase is wonderfully flavorful and we've just been eating it on its own. It's a great snacking cheese, but not sophisticated enough for a post-dinner cheese plate. Haven't tried it with beer yet but I could this standing up to a strong Bavarian quaff. Yum!

This is hardy smoky cheese. Not overly strong in the smokiness. Something to offer as a snack for watching tv. It is really quite subtle in its flavor.

This cheese is simply heaven when heated for a few seconds in the microwave just to the point of melting! The tasty rind is everyone's favorite here and I have to keep the kids from just cutting off that part to eat and leaving the cheese.

This is the genuine product from the German Alps. You can just eat this with crackers, fruit and some German Weisswein and have a gastronomical adventure. However, there are so many ways to use this cheese in various ways and recipes that it boggles the mind. You will just love this smokey cheese from Deutschland.
