In the Alpine valleys of southern Bavaria, elderberry bushes (Sambucus nigra) herald summer's arrival with huge clusters of delicate, sweetly scented white flowers. By mid-September, the flowers mature into heavy clusters of purple-black berries. For centuries, local farmers have used the entire bush - flowers, bark, berries and leaves - as a source of food, for remedies for colds, and to counteract the effects of the cold, dry Alpine climate on tender skin.

Elderberry Cheese or Holunder Cheese - Holunder is the commonly used word for elderberry - is seasonal. It blends natural ingredients in a deliciously innovative way. Yes, I would recommend this to a friend

This cheese was smelly on opening, but improved after being trimmed. The flavor of the elderberries was best at room temperature. My family found it a bit too strong for them. I liked it best on thin-sliced, crusty bread. It was good on cream crackers, too.
