Although Germany is a country with a massive dairy industry, their cheeses remain relatively unknown to those of us outside its borders. One reason for this could be the majority of German cheeses are simply imitations of its neighbor's specialties. However, there are exceptions. Bruder Basil comes to us from Bavaria and is made in the tradition of Rauchkäse, a smoked cheese typical of the region. Originally, Basils were manufactured by Trappist Monks in the Abbey of Rotthalmunster. In 1902, Basil Weixler founded the Bergader Private Cheese Dairy. Today, Bergader still works in accordance with this old tradition of craftmanship. It is still smoked over selected beech wood, which gives it its special flavor. This semi-soft cows milk cheese has a darker, natural rind and a rich, creamy texture. With its smoky flavor, Bruder Basil is ideal for grilled sandwiches; as an alternative to raclette and gratins; and perfect for snacking with your favorite dark German beer or dry white wine.

This was a very surprising cheese! I didn't expect it to have such an intense flavor, but, it was a very pleasnt surprise. While I can't imagine this cheese melted on anything, I did find it to be excellent on cocktail rye with a good Reisling and some good flame grapes on the side. I did try it with pastrami in a sandwich and it was excellant! I'm looking forward to experimenting more with it!

This cheese is decent, but I found it had a substantial bitterness when eating it alone. I'd recommend it as a sandwich cheese, pizza, cheese, or using it in combination with other flavors that will help mask the bitterness.

If you want this cheese and can't find it locally it is very nice to have a source to go to get what you want. This was the case with finding Bruder Basil Cheese in Mt Clemens, MI.
The cheese is every bit as good as what I purchased when it was available in stores locally, but has been absent for the past 16-24 months. The difficultly is paying the same price for shipping as the product, but, if you want someting and are willing to pay the price... and I am, go for it here at this site.
