Ladotiri is an oil-cured cheese from the Greek island of Crete. Its name comes from the Greek words
Oil (lado) and
Cheese (tiri). This cheese is made from a blend of 50% sheep's milk and 50% goat's milk. Its shape is formed by transferring the semi-liquid curd into a wooden basket, then aging it for two months. After aging, the cheese is soaked in local extra virgin olive oil for one month. The cheese cures in the oil and absorbs the flavor of olives.
Ladotiri is made during months when the wild Cretan grasses and plants are green. This gives the cheese a natural, sweet flavor. Serve this flavorful hard cheese as part of a mezze platter with olives, roasted peppers, and bread.
