Because of Greece's less-than-fertile terrain, most of its cheeses are made from sheep's milk. Feta is, of course, the best-known Greek cheese, but fresh sheep's milk cheeses are common, as well. One of the most common of these ricotta-style cheeses is Myzithra. It has a much more interesting flavor and texture than most of the ricotta available in this country. The flavor is rather nutty, and the texture is cottony and drier than ricotta. This cheese works wonderfully in cooking, especially blended into pasta dishes. Our version of Myzithra is actually the pressed and dried version. It is similar to an Italian ricotta salata and is a popular grating cheese in Greece. The cheese is quite crumbly and salty, so a little bit can add a lot of flavor to your dishes.

Dry and salty with a rubbery texture.Definitely a goat cheese.The "jerky" of cheese.I'm still trying to like it!

I'm not sure if what I received was bad, but it really smelled like the inside of a cow barn, and tasted like I believe the inside of a cow barn would! I'm really not trying to be mean or funny, that is really my opinion.

Little known cheese with wonderful taste. Especially tasty served sparingly over pasta with only a touch of butter added. I was introduced to this cheese when dining out at the [@] in Denver, CO and fell in love with the taste immediately. My husband agrees wholeheartedly.

I love to add this cheese to spaghetti, like at the Old Spaghetti Factory, sorry if I spelled wrong. Could be a little dryer and richer with the flavor but overall it is one of the better store bought ones I have gotten.

Best used grated on pasta. It's so smooth you can easily grate it and it makes the dish creamy, with a little saltiness. A great alternative to Parmesan cheese.

This cheese has a pleasant sheep's milk flavor, a bit salty. A dry texture. Can be eaten as is with a drizzle of olive oil. It would make a fine substitute for pecorino romano.

I ordered this cheese after discovering that I couldn't get the Mizithra that the restaurant "The Spaghetti Factory" uses in their recipes. I was not disappointed and in fact, enjoy this true Myzithra even more. It's fantastic grated over spaghetti with brown butter, especially mixed with some grated parm. Great flavor - a little goes a long way!
