Feta is the national cheese of Greece, and surely the best-known Greek cheese in the US. Our Barrel-aged Feta is produced from December through April from a blend of all-natural milk from free-range sheep and goats, whose milk is richer than cow's milk in calcium, vitamin B and proteins. Curd is molded in large round forms, which are hand-turned frequently as they drain. As the whey drains, the cheese-crafter adjusts timing to perfect each form's texture. After skillful dry-salting, wheels are placed in birch barrels for aging and preservation. There they sit in a 7% brine solution that originally allowed farmers to preserve their milk in the hot Mediterranean climate. Today that brine gives feta its characteristic tang.

By the end of the four-month maturation, a wonderfully creamy, rich, complex flavor is fully developed. The care that goes into this feta is evident by its incredible characteristics. Its traditional method of production contributes to its full taste, natural aroma and pure white color, properties which have established Feta over the centuries as a unique natural cheese of Greece.

I've had lots of fetas, some good, some meh, but this one has been consistently great -- tangy without overwhelming other tastes, enduringly moist without being gicky, and easy to crumble without being dry. I toss it into couscous along with tomatoes, scallions, and pine nuts, or mix it with pasta, balsamic vinegar, spinach, red onions, and walnuts. The taste is always rich and creamy, and the saltiness is up front but not too briny. One small drawback: the shrink-wrap container preserves the feta nicely from source to delivery, but you can't use it to store what's left.

I lived a year in Greece and sampled many barrel-aged fetas. I'm glad to say that this compares to the best I tasted in Greece (a feta from the northern town of Trikkala). Creamy, with serious depth and not excessively salty, I'd recommend the delicious feta in salads, spanakopita, or -- best of all -- as a snacking cheese served with a bowl of Kalamata olives and Retsina or Sauvignon Blanc.
