Located in: Cheese, Holland
One of the rarest, most sought after Dutch specially-cured cheeses has been made in the southern provinces of the Netherlands for over 800 years - Extra Aged Farmer Gouda. Easy to distinguish, it is the dairy world's equivalent of a Rembrandt or Van Gogh. This edible opus magnum has been matured for eighteen months, allowing its body to develop a muted caramel color, matched by an intense flavor with a sweet finish. Extra Aged Gouda can be grated or chunked.

Our Extra Aged Gouda is aged 18 months and is produced by CONO Kaasmakers under the Beemster brand. CONO is located in Northern Holland, famous for its rich milk and fertile grazing land.

The coloring and sweetness of this cheese lend to its being a wonderful desert focus or accompaniment. A Bosc pear or even a Fuji Apple are perfect paired with this treat from Holland. I am used to my gouda being softer and more moist (maybe I am a bad cheese person!) but this one was dry and flaky. I liked the flavor but not the texture. I don't think I would buy it again...

This is a standard cheese we keep at home. I usually just eat it with crackers. It is nice to grate over a
bowl of minestrone. It has the nice grana crunch to it that a good Italian grating cheese has. Deep flavor without any bitterness.

I loved this product. My taste buds puckered just right when I bit into this deliciously sharp cheese. It is NOT like the smoked or regular soft Gouda. In fact, it is a completely different cheese. It is hard enough to slice or grate, yet it has a smooth and somewhat "creamy" texture. I haven't tried melting it, but I would imagine it would be great melted on a roastbeef sandwich or just a nice thick piece of roastbeef. I would recommend it for salads, too.

First tasted this at the Yadkin Valley Wine Festival in Elkin, NC. Simply cannot get over the rich, almost butterscotch, flavor. Needs no crackers, no wine (though any strong red makes a perfect complement).

I first tried this Beemster Extra Aged Gouda at the San Diego Wine & Food Festival and was blown away by the beautiful balance of dryness (yes - a dry-style gouda) yet supple creaminess - a yin-and-yang style I had not previously experienced.
Absolutely fabulous as the star of any cheese plate that delivers a feisty aged flavor and silky mouthfeel. This was definitely the star of the last wine party we had. Absolutely outstanding - I can hardly wait to buy more (and intend to do so today).
