Finally, after scouring the Netherlands for a premium producer with the foresight to seriously age his gouda, we have found our man. Though our other two aged goudas are incredible products, this one simply has to be tasted to be believed. Aged for a full five years, this gouda is both intense and complex. Like a fine wine, maturity has been generous to this gouda, lending it nuances other cheeses only dream of. A beguiling array of flavors tease the taste buds and leave you wanting more of this very special item.

This cheese is like candy for adults. If you had your eyes closed you would swear it was made of heath bars, or butter brickle. Of course it is not sugary sweet, but super rich and warm and golden and oh so delicious! The texture is crumbly and even crunchy, as if there really were bits of butter brickle in it. When held in the mouth though, it reverts to smoooth, creamy, melting, deliciousness. When I have a craving for something that Im not sure what it is, I take a small bit of this cheese alone. It seems to satisfy all realms of desire.

I love this cheese. I really like aged Gouda but this one is the "cream of the crop". I am particularly fond of it shaved very thinly with a piece of crusty bread and a glass of Southern Comfort Reserve.

Aged goudas are incredible. If you've ever had Saenkanter, this is its equal, although a bit greasier than Saenkanter. As the gouda ages, amino acids crystallize out and some real flavor develops. You'll gnaw at the rind when the time comes.

We like to make antipasti or cold plates for dinner. This cheese is the highlight of the plate. It doesn't get any better, add some good hard salami, olives, red peppers, pepperchinies, whatever else you like to munch. You have to try this chesse if you love cheese.

My batch is very moist and firm: slices beautifully and grates well. I am eating it with pumpernickel bread and drinking iced coffee. Would be a sybarite experience with an aged port! One of those tastes that lingers in the mouth, and after a pleasure filled moment to savor the flavor in full, calls for another nibble. Ahhh, makes time slow down.

A wonderful experience for any cheese lover. Rich buttery/butterscotch after dinner cheese. Pretty good before dinner as well! Wonderful with a good Oloroso Sherry. Nice texture, with Parmesian-like chrystals. I have already ordered some more.

Compared to the double-aged gouda which is spectacular with rich red wine and a baguette, the triple-aged gouda is too dry and very crumbly, with no added benefit to being triple-aged, unless you need crumbled cheese for something. It is also quite a bit saltier than the double-aged gouda. We haven't figured out a use for this cheese yet - it is much too powerful as a food topping.
