Each wheel of Dorothea (only 4,000 are made per year) is pampered with the optimum aging conditions. Humidity and temperature are meticulously adjusted every few days to assure proper maturation. This wonderfully delicious cheese is made from pasteurized milk but retains all of the taste for which goat's milk is famous. It is aged over 60 days to develop a full, nutty flavor and a body that is firm, but not hard enough to grate. Dorothea has an aroma reminiscent of the fresh outdoors and an unforgettable flavor.

Discovered this cheese at the Epcot Wine and Food Festival when iGourmet was sponsoring a booth! Went back this year and was glad they had it again. I order it all the time now for it's the most unique cheese I have ever tasted in my life and love it!

There's a case to be made that truly great cheese doesn't need any flavoring; that flavors distract from the whole product, like hamburger seasoning. I get that. But Dorothea is the perfect counter to that argument. The herbs and oils accentuate, rather than overwhelm the cheese. It was great on its own but paired delightfully with a nice dolcetta. Absolutely recommend.

Sampled this a few years ago at the Indiana Wine Festival. My friends and I were immediately addicted and I've ordered it frequently, plus we've turned other people on to it. So,I guess I'm partly to blame when I see see the dreaded "out of stock". If my husband knows we have it, then it's gone really fast!

I can't say enough about this cheese - it's just amazing and complex in flavor. I have had it over and over, keep it on hand and share it, sparingly! That would mean less for me! I use this in everything, I eat with crackers, in eggs in the morning, on salads, just slice a chunk and just eat it. I do prefer to let it sit at room temp for about 30 minutes before serving to guests. Again, they have to rate high with me to get this cheese - it's THAT good!

We love Dorothea after tasting it at EPCOT's Food and Wine Festival. This was our second time ordering it and I ordered 2 wedges. One wedge was not quite as flavorful but the 2nd wedge was excellent as before.

I sampled this wonderful cheese at the EPCOT Food and Wine Festival this year. I went back three times but they were sold out. Small wonder! I asked for the name of the cheese and ordered 3 1/2 pound pieces. I'm down to one already! I love this cheese with a crust of bread or soups or olives. I have had it with a Guinness although it stands up better with a Harps or the likes of that if you perfer beers, which I do. I tried with a wheat beer, very nice. I am thrilled to have it, I shared (a little) with my daughter. Yummy!

I love cheese. THIS is now my favorite. I had a taste at the EPCOT Food and Wine Festival at Walt Disney World and I couldn't wait to get home and order more. Dorothea is a mild goat cheese that is extremely pleasing. We like it by itself on wheat crackers. The taste is so mild though, that if you go to anything stronger and then come back to Dorothea, it becomes virtually tasteless.
