Anna Van Dijk, producer of Dorothea and Van Dijk cheeses, has come up with yet another incredible creation - a goat's milk cheese with whole coriander seeds. All of Anna's cheeses are made in the southern end of the Netherlands near Eindhoven. Cornelia, like Dorothea and Van Dijk, is made from a single herd of 500 goats that graze on pastures of natural grasses and wild herbs. This old-world style of raising goats yields a remarkably flavorful milk that gives all of Anna's cheeses an abundance of character. The coriander seed has a flavor similar to a combination of lemon, sage and caraway. Her semi-hard cheese has a creamy mouth feel and the texture is further enhanced with the addition of whole coriander seeds.

I am a big fan of both Cornelia and Dorothea cheeses. Cornelia's texture is smooth, the body is firm yet yielding. The flavors are bright and vibrant but not strong. I think that the coriander added, compliments very well the inherent characteristics of the cheese. I like to eat it without any accompaniment, It is a satisfying snack, with flavor that stays with you. Do you have a craving for something, but you don't know what? Take a nibble of this, and your mouth is filled with happiness.
By the way, if you are calorie and fat conscious as I am, don't worry- the smallest nibble of this cheese goes a long way and is very satisfying.

I never would have a cheese mixed with "stuff" but I was at a wine tasting so I did. FABULOUS. So happy I tried it and really was surprised. I will enjoy this cheese anytime.

I purchased this cheese because of the reviews and I wasn't expecting anything incredibly different. But, WOW! This is so different form anything I have ever had. It is so hard to describe. It is creamy, mild, yet with a suprising "pop" of crunch and light flavor of the coriander.

This was served at a wine tasting I went to. This cheese was unique. It's nutty complex flavor complimented most of the wines! I could have eaten all that was in my path!

The sweet flavor of goat cheese and the savory flavor of coriander blend to perfection in this cheese. This has become a staple on our cheese plate. The coriander does not in any way overwhelm the cheese or any other food with which it is eaten.
