The recipe for this cheese from Zeeuws-Vlaanderen dates back many centuries. Its name means "Flax Cheese", owing not to an ingredient but to the plant that dominates the local countryside. Still made in an old-fashioned manner, in the Middle Ages it was quite popular and always served at the annual oogstfeest (Flemish harvest festival). Similar to Gouda but richer, creamier and deeper yellow in color, Vlaskaas' purple rind distinguishes it from all other cheeses.

The taste and texture of this cheese is different from any other and very unique. There is an unexpected "crunch" due to what I believe is salt crystals in the cheese. I have read that it is NOT flaxseed as one would assume believe that is is associated with the flax harvest season.

Everyone in my family loved this cheese when they first tried it. It contains nice little crunchy bits
which add interest to the texture....wonderful on crackers....it will make a repeat appearance in our household.

I experimented with this as an hors d'oeuvre for Thanksgiving dinner, and it was a big hit. Although it's not a strong flavor, there's definitely something there, and it stood up well to different kinds of crackers. It's also pretty tasty on its own. Of all the different cheeses I put out it was the first one gone. Will definitely get this again!
