The cheese market in Holland is changing rapidly. For years, Holland was known for Gouda and Edam, two simple cheeses that appeal to the masses. But as tastes have moved upscale, the popularity of Gouda and Edam has waned. With almost every cheese plant in Holland geared up for the production of these two cheeses, a gap between supply and demand threatened to put the smaller cheesemakers out of business. While many got bought out by larger competitors, several shifted their strategy to new and inventive specialty cheeses. Since the mid 1990's, many new cheeses have been developed in Holland. Rouveen, the maker of this cheese, is one of the pioneers of the specialty movement.

This is a ridiculously addictive cheese. The texture is perfectly balanced and the garlic flavor is obvious without being overpowering. This is the absolute best cheese for grilled cheese sandwiches. It is fabulous by itself, but really shines when paired with simple mild foods and light wines. The only issue is it is so yummy you run out before the next shipment gets to the house! A keeper.

Wish I had bought more of this when I first got it-it is addictive! I love garlic and I love most cheeses, especially Gouda, so this is perfect.Stronger flavor if you let it get to room temperature before eating.

I actually ended up buying several to give to my garlic-loving friends and family.
This cheese had a nice flavor and did not overpower any food it was added to.
I used it in several recipes and served it on pepper crackers as an Hor d'oevre~(delicious).
I will have it as a "staple" in my refrigerator
from now on.

We love Gouda cheese and we love garlic. The Wild Garlic Gouda is the perfect combination of both. For New Year's Eve we had it on baguette bread with champagne and grapes on the side. Nothing could have been better! What a great way to bring in the new year!
