This full-flavored cheese from Holland is named after a famous style of Dutch pottery, which itself is named after an ancient Dutch city situated to the west of Rotterdam. The city of Delft is part of the Randstad, an urban area stretching from Amsterdam through the Hague and southeast to Rotterdam. Because of The Delft University of Technology, Delft is one of Holland's main educational and research centers. However, only its name links this cheese to the city of Delft. Delft Natural is made in the province of Noord-Holland, an agricultural area bordered on its west by the North Sea and to the east by the Ijsselmeer (Lake Yssel). Noord-Holland is most famous for the production of Gouda cheese.

This cheese looks like a small piece of pottery. Enrobed in a white wax and detailed with blue labeling, it is certainly a beautiful specimen. However, its true beauty lies beneath. Cutting into the wheel exposes a custard-colored interior and sets free a sweet fragrance that fills the room with wonderful dairy aromas. Handmade from rich, pure, unpasteurized cow's milk, this "Boerenkaas" (Dutch for farmer's cheese) delights the palate with its sharp yet fruity qualities. Be sure to set it out for at least 45 minutes before eating, as its character blossoms upon reaching room temperature.
