A seasonal cheese, this limited availability product is only produced in the summer. Beemster's world famous milk becomes even more coveted during the last two weeks of March. The milk taken from the Beemster cows during this period is the creamiest milk of the year. This is the only milk used to create Graskaas, an exceptional Gouda-type cheese enrobed in a vibrant, green rind. During the limited "first grazing" period, enough milk is collected to craft just 2,000 wheels of Graskaas; only half of which are exported to the U.S. Made in the beginning of April and aged for one month, the recipe for Graskaas dates back to 1901.

This is such a basic all around delicious cheese. Everyone who tastes this loves it. Melts perfectly and pairs with anything. I just shredded some and stirred it into scrambled eggs with some snipped chives-so good!

I first was introduced to the Beemsterkaas product on a visit to Holland in 2002 and had the privelege of touring the manufacturing facility. I have since been a major fan of the Beemster Cheese line, including all varieties from the aged cheeses to the Edams. The Graskaas spring cheese is absolutly setting the standard for consistancy and flavor that propels any cheese to greatness. BRAVO BEEMSTER !!!

Very fine taste and texture. Not strong, but interesting and satisfying. Works well for many uses. The two orders I received in February and March were both great, as well as an outstanding end-of-season value.

Although I don't speak "Beemster" I guess you might translate Graskass as "fat cheese". This is a winner! It pairs well with Bonny Doon's Pink wine, or their Big House White, or any California chardonnay worth drinking.

This is really an anywhere, anytime cheese. Has enough flavor to satisfy anyone, yet not enough to overwhelm anyone. Mellow, melts really well in your mouth or in hot foods, not greasy or stringy when melted.

This was a beautiful cheese, mild flavored but with enough zing! to hold it's own against apples, apricots and strawberries. FanTAStic in a grilled cheese sandwich and just gorgeous in fondue. I would definitely buy again.

Ok, so my 16 month old can't get enough of this stuff [...] The fact that he likes it so much implies a little criticism though. Its really not that unique. Don't get me wrong its delicious and a little nutty but its a crowd pleaser. But its hard enough to get my toddler to eat anything so this is a favorite with me!

This cheese has a wonderfully smooth texture that goes well with crackers. There is a very soft "edge" to its taste. That is to say, it is a mild cheese, but the taste does not simply disappear once eaten.
