Clove cheese is a unique Dutch specialty, though seldom available outside of Holland. The Friesian people of northeastern Holland developed this cheese using cloves and cumin as flavorful additions. Since cloves resemble nails, the cheese is locally known as "Nail cheese" or in Dutch, "Nagelkaas." Nagelkaas has a pronounced spicy taste, thus a little bit goes a long way. Made from skim milk, this cheese is only 23% butterfat, giving it a firm texture. But that is not to say it is low in flavor - to the contrary, it is very flavorful thanks to the added spices!

This is, perhaps surprisingly, is a delightfully good cheese, especially for being low-fat. It seems to taste best sliced somewhat thin (not cubed or chunked) because the clove is a powerhouse in this cheese. Friesian Clove goes very well on a snack tray with spice pairing fruit, especially oranges and apples, and good wheat crackers. It seems to enhance many red wines--those reds with more sweeter notes than super dry, and especially with a well made Sangria.

I love cheese and I love cloves. But these two shouldn't have been put together. I had a cheese tasteing the other day and added this to plate. But most of the people couldn't even finish the small bite I had giving them. In fact I try to give it away cause I knew I wouldn't eat the rest of it. No one even wanted it for free.

This is my favorite cheese. Hard to find locally.
Toast, jam and this cheese (replaces butter)is oh so good. The thinnest slices of cheese is all that is needed.

I discovered Leyden a long time ago and have always enjoyed its exotic cumin flavor. Nagelkaas takes that enjoyment into a new realm with the addition of cloves. The combination is unlike any other cheese available. If you are a true cheese adventurer, you cannot miss this opportunity to try a genuine Dutch treat. No pun intended.
