Along the canalized Schie River, between Rotterdam and Den Hague, lies Delft. Home to the artist Vermeer and the tin glazed earthenware known as Delftware, it has always been a home to fine craftsmanship. Recently a new addition to these fine examples has been added - Delft Blue. Also known as Blue de Graven, this cow's milk cheese is rich and creamy with a buttery mellow taste and a clean finish. “Delft” has a nice underlying sweetness and is not at all salty. Not only is this cheese delicious, the attractive blue veins intermingle in the milky whiteness resembling the lovely blue and white Delftware, as if it were broken and put back together again. First encountered this as a relatively new cheese in Gouda. Continue to think it is the best all around blue. Not as salty as many with a clean blue taste.

This is one of the best blue cheeses I've ever tasted. Addictive!!! Absolutely nothing bad to say about it. It is very hard to find good cheeses here in Savannah, so I am very happy to have found igourmet and this cheese in particular!

When in Gouda in the Netherlands recently I visited a cheese shop. I was given a taste of Delft Blue cheese. A lover of blue cheese already, I was impressed with the smooth flavor of this variety. The shop vacuum wrapped a piece for me to bring home through customs. When opened it lasted only as long as it took me, my husband and our friends to finish it. I was thrilled to find that I could get the cheese in the US as well. It is outstanding..a little sweeter than many blues, but just as rich and flavorful. It can be used crumbled or melted, but is so good that alone is best.

This cheese is of mild to medium strength compared to, say, a Stilton. It is, however, very flavorful. I have enjoyed even the non-blue form of this cheese. Highly recommended for blue cheese lovers who haven't experimented.
