On our last trip to Holland, one of our Dutch suppliers informed us that Holland is the one of the most densely populated countries in Europe. This fact, combined with the fact that thirty percent of the land in The Netherlands is under sea-level, makes organic agriculture particularly vital for this country, considering that traditional agriculture is one of the biggest polluters of inland waterways. This cheese is very similar to our Farmer Gouda in type, age, and flavor. It is, however, made from organic milk, sourced from cows that are not given any antibiotics, hormones, or growth factors. They graze on fields and eat grains that have not been treated with chemical fertilizers, herbicides, or pesticides. The natural goodness of the Dutch countryside shines through in the resulting cheese.

Tasty, but wrapped in plastic, not wax

The whole reason I bought this cheese is because in the picture it looked like it was wrapped in wax, not plastic. Pretty much all cheeses int he US are wrapped in plastic and chemicals called "phthalates" which leach into the cheese. These chemicals are endocrine disrupters which can be responsible for hormone imbalances. I have been to Holland myself and they sold cheese, even very small ones, wrapped in wax. Since this cheese was from Holland I was expecting that. But no, they had to chop it up and plastic it up. [...]Otherwise cheese was good, just full of phthalates.

I was pleasantly surprised by the amount of flavor provided by the organic Gouda. It added some sharp cheddar flavors on top of the more traditional Gouda we usually buy in the stores. Maybe that's why it became so much more cookable/meltable. When heated, it opened up for more flavors. Highly recommended - but don't look for the standard gouda depth of cream.

I would say that this cheese is a little too soft for me. But, again, someone who prefer milder softer cheeses, would love it, and the fact that its organic, is definitely a big plus!
