We experienced a moment of culinary divinity when we first sampled this double-aged Gouda. Previously, we doubted that any cheese could be more flavorful than Beemster's 18-month Aged Gouda, but their X.O. indeed sets a new bar. With this 26-month gouda, we first noticed its delicate, brittle texture. After we tasted it, the flavor of butterscotch permeated the palate, followed by alternating waves of whiskey and pecan.

Made from pasteurized cow's milk.

This cheese was a joy! it exhibited several complex characteristics. It was semi-firm, but softened magnificently when I ate it. the flavors are rich and deep. In has a flavor not dissimilar to that of a good Parmesan, but with the caramel and nutty tones still retaining their prominence.

This is a wonderful cheese! I love the nuances the aging gives this cheese. Tried it with Whisky as suggested and really like the combination. Also tried it with a Dolcetto I like and liked this combination so much that I served it as a Desert.

Many lovely notes, but what lingers on the tongue is a wonderful caramel, which makes this a perfect desert cheese.

We served this on toasted french bread and on plain crackers with ginger jam. Everyone in our group loved it. Paired well with Sauvignon Blanc (South African) and a merlot or pinot noir.

The cheese is wonderful paired with a few apple or pear slices for a deeply satisfying snack. We don't like to add it to complex dishes because it's just too good alone! We don't want to cloud that flavor. Nutty, with definite butterscotch and caramel aftertastes. The outer edge has bits that are almost crystalline with age, and become little crunchy wonderful surprise bursts of flavor. Fabulous.
