I love this cheese. Edam is a terrific cheese; firm but smooth, nutty and rich but not overpowering; very tasty. It slices well, it cubes great (one of my favorites for a cheese platter) and it holds it shape well when at room temperature without weeping or getting shiny. The 4# size is a bonus. I have an Asian wife , and Edam is a Christmas/New year treat through out Asia but some times hard to find in the US after new year

The best Edam I have ever tried in United States. Reminds me of years I lived in Holland -yes, it tastes like real Dutch Edam! Semi -hard, no problem cutting it, amazing in cheese-mayo-tomato kind salads, or as a snack. I highly recommend it!
