Carrigaline is an Irish farmhouse cheese from County Cork. The cheese is named after its town of origin, which in turn is derived from the Gaelic words “Carraig-Ui-Leighin”, meaning “Rock of the Lynes”. The Lynes were an old Irish family who built a stone castle on a domineering hilltop of limestone rock in 1170AD. Besides cheese, Carrigaline is known for its pottery and its fabulous county market, heralded as one of the best in Ireland. Ann and Pat O'Farrell make their semi-soft Carrigaline cheese with cow's milk from their own Fresian herd. This cheese is ideal for melting or simply for enjoying with an after-dinner drink. Available plain or flavored with garlic and herbs.

Good for snacks, we ate a lot this way. Excellent in pizza. We almost didn't have enough to put on the pizza. We were disappointed when we went to reorder and found it sold out but we do understand why.

Ever since we came across Carrigaline on a trip to Ireland, this has been a real favorite in my family. Not very complex or unusual, except that it's absolutely delicious, just gives great satisfaction and fine flavor. It's always a treat with visitors, from cheese-lovers to more ordinary folk like ourselves.

I know, you're going to argue that your favorite melting cheese deserves the title. But this is clearly one of the best, oozing toasty richness the way a certain mass-retail "velvety" cheese only wishes it could.

Flavor profile is close to a semi-soft, mild cheddar with a nice, long finish.
