Ireland's Beechmount Farm makes this superb blue cheese. Louis and Jane Grubb own this farm in the rolling hills of Tipperary. This county is the heart of horse country and a center for outdoor activity, including pony rides, treks on horseback, fishing, riding, and bird watching. The folks in Tipperary enjoy the good things in life, including their cheese. Cashel Blue is a young, somewhat mild and extra creamy cheese that, unlike inferior blues, is not too salty. It is a fabulous alternative to Gorgonzola or Stilton.

I'm not a connoisseur of anything but I know what I like...and I like this cheese. It's like no other blue I've ever had. It's extra creamy with "potent" pockets of flavor that makes a blue cheese a blue cheese - but more of it.

If you're looking for an everyday-flavored blue this isn't the cheese for you, but if you're looking for a super rich blue with explosive flavor give this one a try. I received this cheese as a Christmas gift from my daughter and I can honestly say it's one of my most favorite gifts ever.

I first tasted this cheese when I was in the UK and I was so happy to find it on igourmet. I introduced it to some of my friends and everyone thought it was fantastic. It is a step above your run of the mill blue cheeses, and even though the taste is bold, it is not overwhelming and not as salty as many blue. If you like blue chesses you should definitely give it a try. You'll never go back!

I have tried dozens of blue cheeses. This is the one I like the best. Exceptional taste and smoothness. My most frequent use is to use it as a spread on "chunks" of warm baggette as a meal. One minor reservation. On rare instances the quality is not consistent. Good wheels are exceptional. Poor wheels are no better than many other brands. I strongly recommend you try this.

One of the best Blues I've tried. Sweet and creamy like a gorgonzola. Blue vein is present but not overpowering. A solid addition to a cheese board.
