Located in County Limerick and recognized as the originator of fine Irish cheese, Marion Cahill of Cahill's Farm has developed an interesting range of flavored cheddars. Using a base of tangy Irish cheddar, she has experimented with a variety of flavors and has come up with some very popular combinations. We offer three types of Cahill's Farm Cheddar: Elderberry, Porter and Irish Whiskey. These semi-soft cheddars are made from pasteurized cow's milk and vegetable rennet. Varieties sold separately.

This is such a wonderful cheese. I only wish it was more readily available. Irish cheeses may be the one of best kept secrets. If you love really great cheese, give this one a try. You won't be disappointed.

My first taste of this cheese was at a wedding rehearsal dinner by Chef Nick Mueller of Savannah. I have been hooked since.
My vegetarian friends find it a hearty replacement for meat. When I serve it at parties; everyone wants to know where I purchase it and raves about the flavor. I have never had anyone dislike this cheese.

We used this on a cheese plate with bread and wine. It was wonderful. I wish I had served it with apples and pears. It would have been perfect. Instead, it was just delicious on its own merit.

This was served on a cheese plate, accompanied by bread and wine. It was very well received. I would serve apples and pears with it next time. The Irish Whiskey flavor was noticeable but not overpowering.
