Dubliner was first described to us as a mixture between Cheddar and Parmigiano Reggiano. This description is quite accurate. Dubliner is a robust, aged cow's milk cheese with a bit of a hard texture similar to a Cheddar. In one bite you can taste the diversity of flavors - from nutty to sharp to sweet. What might seem ambiguous is actually a well-balanced mix of cheese cultures and naturally occurring amino acids. This diversity pays off in its ability to be served alongside a full-bodied Cabernet, a freshly pulled pint of Guinness, or simply melted between a few slices of crusty brown bread.

We find this to be of excellent quality, can be substituted for Parmesan..
It is excellent for snacking.. and it is also nutritious.

My wife and I both absolutely love the balanced flavor and texture of this cheese. Just the right texture for slicing-not too hard & not too soft. One of the most unusual characters of this cheese is the tiny crystalline texture of what may be the natural milk lactose --not sure--that you can distinctly feel as you bite the cheese. This makes the cheese a very distinctive eating experience.
