Dubliner was first described to us as a mixture between Cheddar and Parmigiano Reggiano. This description is quite accurate. Dubliner tastes of a mature Cheddar with the sweet aftertaste of Reggiano. Created by the Irish company Kerrygold and named after Ireland's capital city, this cheese shares traits with several well-known cheeses, but the combination creates a flavor that is completely unique.

I ate it with crackers. I thought this was one of the two irish cheeses I tried at the Food and Wine Festival at Epcot this year, but they must have been Ivernia and Irish Cheddar. I prefer firm, sharp cheese, and this just left something to be desired. I will be ordering the Ivernia [...]

The only problem I have with this cheese is not eating it up... I could easily eat this for breakfast lunch and dinner and forget everything else. I'm absolutely gaga about this cheese and I normally wont allow myself to buy it unless I'm having a dinner party and I plan to share it. Otherwise I am afraid I could not help myself and I would gobble this up regardless of the calories.

I really don't know how to describe this cheese, because it's in a league of its own. I usually don't like cheeses this firm; sometimes they don't have much flavor and break apart. This one has flavor to spare and holds together well. What a wonderful surprise . . . had not thought of Irish cheese as a "must have".

This is a wonderfully buttery cheddar, more delicate than most American cheeses. If you hold it on your tongue for a moment, the rich flavor fills your mouth and makes you sigh! It is especially fine with fruit, but nice with a plain cracker, too. Most delicious.

Good cheese. Had it at a friends during our winter travels and just had to find out what it was and where I could buy it. It could be a bit more flavorful and I like a little salt with it when I use it for grilled cheese sandwich. One major concern......I eat too much of it. :-)

Very nice flavor, excellent on crackers with tomato relish or mustard as well as alone. Excellent shredded and melted on zucchini or other squash.
