To make their extra sharp Shamrock Cheddar, cow's milk curd is scalded twice and is repeatedly cut and piled in order to remove the whey and break down the curd. This gives the cheese a unique texture and flavor. Shamrock Cheddar is aged for over 12 months and has a creamy, taut texture and sweet, grassy flavor.

Very good, tangy cheese with a bit of bite. Excellent alone. Would not recommend it as part of sandwich. this cheese needs a bread that is equally good.

I love a good sharp cheddar, but this isn't one of them. The texture is so-so -- a little too grainy dry. The taste is bland, not at all what I expect from a sharp cheese. I will use this melted in dishes, but only with strongly flavored other ingredients.
