Ireland is a rich, green and fertile land, home to five times as many cattle as humans. To make their extra sharp Shamrock Cheddar, cow's milk curd is scalded twice and is repeatedly cut and piled in order to remove the whey and break down the curd. This gives the cheese a unique texture and flavor. Shamrock Cheddar is aged for over 12 months and has a creamy, taut texture and sweet, grassy flavor.

I bought this cheese based on the positive reviews, but was disappointed. The texture was very crumbly, which is fine, but there were "crystals" in the cheese that were not good at all. Also, when I buy a sharp cheddar I expect a good, strong, sharp taste, and this cheese did not deliver that.

I am currently working overseas and to say the least the simple pleasures in life are not readily available. This cheese brings comfort and delight. I eat it with a very light cracker and I have shared with several of my co-workers and they are all anxiously awaiting their shipment. Thank you so much for such a delightful product.

this cheese is amzing it tase so sucklient and crumbles in your mouth and i would advise anyone to get this cheese as it is the best one out there.

An excellent cheese for a cheese tray. I used this cheese as one of the cheeses for the first course of my tailgate party for the steeplechases. Everyone loved it and thought it an excellent example of Irish Cheddar.

This cheese can be used a lot of ways: plain; with crackers, meat, or fruit; in sandwiches; and with wine or beer. It is not strong and has a great texture.
