This cheese, just like an aged parmigiano, has lactic acid crystals throughout its interior. Perhaps due to the aging process, it is just as easy to digest as a good parmigiano. This is good news for our lactose-intolerant family members!

When I "mentally taste" perfect cheddar, the flavor of this cheddar is what I taste. I found nothing objectional about it in any of the ways I used it: slices with apples or pears; the family favorite, macaroni and cheese; shredded in salads; and my favorite, an accompaniment to a good glass of red wine and a thick slice of homemade bread. We love it!

This is a very good Irish Cheddar. For a simple but yet satisfying meal, try the Cheddar with artisan/crusty Rye/Whole Wheat or even French Bread.
