Bianco Sottobosco is a very special cheese. Handmade in Cuneo in the Piedmont from a blend of cow's milk and goat's milk, Bianco Sottobosco also incorporates cuts of authentic black truffle found in Alba. It has a slightly dry texture and a fresh, earthy flavor. Aged for six weeks in a dedicated mountain cave whose walls are made of Tufo (porous rock), this cheese has to be tasted to fully understand its splendor. Excellent served before the meal with a glass of Barolo, this rare cheese is completely unknown outside its native area and will certainly impress any cheese lover.

This was probably the most pungent cheese I've tasted, however it kept on tempting me to return for another taste. Also, as far as I know, my first taste of something with truffle in it. This was truly an experience.

If you love their boschetto you gotta give this a try. Very crumbly, but that makes it perfect for a salad, especialyy with a juicy steak next to it! Subtle truffle flavor works great with Sangiovese or Cab

I like the creamy nature of the cow's milk, but the addition of tangy, lemony goat's milk really makes this a winning cheese. The bright flavor of the goat is slightly soothed by the full, earthy flavor of the truffles. The perfect ending dish to follow lamb and fennel risotto.

excellent with fruit and honey; nice truffle flavor. nice texture. if you're looking for a cheese with a strong personality, this isn't it, but if you're looking to enjoy a mellow companion, something on a warm summer day while reading a book and sipping wine --let this sit for at least a half hour or so at room temp and nibble away.

Very nice flavor and texture, smooth yet firm. Great as a spread or mixed in a sauce. Only thing was unable to taste the Black Truffles
This cheese was very good and unexpected treat, not overpowering yet distinct.
