Brinata means early morning frost in Italian. It is our favorite sheep's milk brie. Made from a complex production process with only the purest sheep's milk, Brinata has an edible, delicate white mold rind and a soft, smooth texture. It tastes like an exquisite brie, but with a slight sheepy tang and a bit more moisture. Flown in to us bi-weekly straight from the fields of Mugello in Tuscany, you won't find a fresher imported cheese anywhere else in the U.S.A.

Just an all around great cheese. The only thing this cheese is not, is sharp-It's EVERYTHING else that is good about cheese, and that's the simplest way that I know how to say it!

You will eat the whole wheel in one sitting, as we did, "straight" with no accompaniment, and it will go right to your butt/belly! It is mild but flavorful with an edible rind and it's absolutely delicious. My husband won't eat rinds but he ate this one.

mild with a good mouthfeel and a pleasant aftertaste. Goes with just about anything. My only complaint is that it only comes in a 2 pound size, which is too much because it doesn't stay super fresh for more than a week or two in the frig -- unless, of course, it's for a party (even the non-foodies loved it) or you freeze part of it (which makes it a bit crumbly but still tasty).

Notice that the item description says, "you won't find a fresher cheese anywhere else". Read: this brie is completely under-ripe. I don't know if you could wait a few months and ripen it yourself, but I suspect it would just dry up in the fridge. This is the only cheese I've gotten from [...] that is not vacuum-packed. It just comes wrapped in special paper (that's a good thing; cheese needs to breathe).

igourmet Response: We vacuum-pack most of our cheeses just before shipping to ensure freshness during transport. We invite our customers to remove the packaging upon receipt and rewrap in paper or foil if they want the cheese to breathe.
