I live in an area that avails a cook of anything they need, but this cheese was the most elusive. The only Fontina that could be found was from Finland, not what I was searching for. This is a rustic cheese, has its own flavor. Good for au gratin dishes, bruschetta, and Italian-style casseroles..Yes, it has an aroma upon first opening the package, but it's certainly nothing out of the norm. It disspates quickly, and you're left with just the subtle taste of Italy.

The taste is great... but I just need to get used to the smell... kind of smells a little like road-kill. In any case, this is the first time I've had this kind of cheese and I find it really interesting.

I loved the taste of this fontina. Quite different than what I expected but an excellent addition to the other cheeses in my lasagne. Next, to try it with polenta or melted over disc
polenta with figs...
