Fontina is the symbol of agriculture in Italy's tiny, French speaking Aosta Valley region. The cows that produce the milk for Fontina Val d'Aosta graze on high-altitude Alpine pastures dotted with wildflowers and native herbs. Fontina is a great cooking cheese, as it melts evenly without losing any flavor. Extremely aromatic (some might say "stinky"), Fontina is best noted for its value as a savory and fruity table cheese. Its slightly grassy flavor embodies the taste of a true raw milk cheese.

We used the fontina for Bruschetta and in some pasta dishes. It melts fabulously and tastes sooo very smooth. Wonderful cheese that we will buy and use often.

I live in an area that avails a cook of anything they need, but this cheese was the most elusive. The only Fontina that could be found was from Finland, not what I was searching for. This is a rustic cheese, has its own flavor. Good for au gratin dishes, bruschetta, and Italian-style casseroles..Yes, it has an aroma upon first opening the package, but it's certainly nothing out of the norm. It disspates quickly, and you're left with just the subtle taste of Italy.

I loved the taste of this fontina. Quite different than what I expected but an excellent addition to the other cheeses in my lasagne. Next, to try it with polenta or melted over disc
